Baked chicken orange juice is a healthy eating dish with orange tasty flavour!

BAKED CHICKEN IN ORANGE JUICE IS DEFINITELY A HEALTHY EATING CHICKEN MEAL:

 Baked chicken in orange juice is in all aspects a very healthy eating dish because orange juice on its own has super health benefits.

As  one Michael D. Ozner, MD, president of the American Heart Association of Miami and the author of the "The Miami Mediterranean diet loose weight and lower your Risk of Heart Disease"  says: Or claims that  drinking two or three glasses a day of orange juice 'Healthy Heart'  would reduce the risk of heart disease and stroke because orange juice is, in fact a healthy juice especially with the pulp, - is super loaded with vitamin C, potassium and folic acid"

In this recipe, there is no need to peel the potatoes before cutting them into the cubes. The skins hold most of the nutrients found in potatoes. You may also substitute sweet potatoes for the white potatoes if you wish.

You can equally substitute pork for the chicken or if you are looking for a vegetarian dish use seitan, a wheat product usually found with the tofu in most supermarkets.

The preparation of this meal is about 15 minutes and the baking time is about 45 minutes. This means that at most within one hour the meal will be ready for eating.

RECIPES/INGREDIENTS/PREPARATION FOR 4-6 SERVINGS:

1.   2 lbs of chicken breasts

2.   1 t cumin seeds

3.   1/2 t of salt + 1/4 of pepper

4.   4 garlic cloves, minced

5.   1 potato, cut into1 inch cubes

6.   1 bell pepper, cored, seeded and cut into strips or wedges

7.   1 small yellow summer squash, cut into chunks

8.   3 C of broccoli florets

9.    6 T of wine vinegar + 6 T of orange juice

10.   1 t of oregano + 1 t of paprika

11.   1/2 t of allspice + 1/4 t of red pepper flakes

To start, first, spray the lid of the inside of a cast iron Dutch oven with cooking spray and allow the oven to preheat to 450 degrees.

Then, spread the cumin seeds over the bottom of the prepared pan.

Now lay the chicken over the seeds and season with the salt and pepper, and spread the garlic over the chicken.

Now, layer in order the potatoes, bell pepper, squash and broccoli over the chicken.

Pour the vinegar into a mixing bowl and add the orange juice and whisk lightly.

Now, add oregano, paprika, allspice and pepper flakes and whisk until well combined.

Finally, pour the mixture over the chicken and vegetables and cover the pan and bake for 45 minutes or until the chicken is thoroughly cooked.
