BAKED YAM RECIPE IS NOT ONLY NUTRITIOUS AND DELICIOUS BUT AN IDEAL DIET FOR WEIGHT-WATCHERS!
Sometimes I seem to wonder how much I love my country and many other countries of the world that cultivate, harvest and eat yams! I Wonder too what a country like Nigeria and Ghana would have been (food wise) if Yams were not cultivated and eaten in their countries.
Another thing that excites me about yam is its versatility! Just imagine, you can boil a yam, grill, fry, barbecue,roast, bake; and turn it into powdered form and steam it to make Amala and mash it to become pounded yam!
This vegetable foodstuff's credibility,and importance is unequaled in the economic and human history especially among the countries and the people that cultivate and eat it.
I still wonder how Nigeria would have fed this ever growing population of hers!
BAKED YAM RECIPE
I must be frank, not many Nigerians are keen on baked yam recipes. An average Nigeria living in the village or city would prefer to boil, fry, barbecue, roast and pound yams but not really grill or bake a yam!
Throughout my years in Nigeria, I never heard that yams can be baked. I heard of baking bread in the type of bread ovens we have in Nigeria but never of baking yams! What for, an average Nigeria would ask? Well, it is understandable, in spite of Nigerian's economic power and oil revenue,neither electric nor gas cooker can ever be universally installed because, these powers are not available!
Nigerian nation with a population of 150,000,000,but you can count with your fingers how many people that have and successfully cook with gas or electric cookers in Nigeria. You will be lucky if you find 1000 people who own gas or electric cookers that are working successfully! It is sad!
Now you can see why I'm not keen on baked yams. To be sincere, I have only cooked and eaten it here in Europe! I'm sure many Nigerians in Nigeria have never heard of baked yams. Yes, with the type of bread oven we have, there, people will wonder how anybody can bake yam in such ovens they wouldn't think about the ovens in the gas or electric cookers. Many villagers have not seen such white man's contraptions! You wouldn't blame them such is life!
BAKING YAMS CAN BE DONE IN THREE DIFFERENT WAYS:
1. YOU FIRST BRING OUT THE YAM TUBERS, THEN YOU DECIDE HOW MANY PEOPLE THAT WILL PARTICIPATE IN EATING THE BAKED YAMS.
Once you have decided the number of people that will eat the meal, then you cut the yams into several pieces, peel the yams and then wash the pieces thoroughly. Remember that yam tubers have poisonous liquid coating which comes out after peeling it. If this liquid touches your body, it can be itchy.
Under baking circumstances, the ovens are preheated at between 350-400 degrees F or (200 degrees Celsius)
When you are ready, you then rub margarine or butter and add salt on the yams and place them on baking foils and tray.
Allow to bake for at least 15 minutes and turn the pieces over and give it anther 15 minutes. Use fork to test if it has become soft,tender and brownish. Allow to cool you can eat the baked yams with vegetables like runner beans,mushroom,broccoli,asparagus and many other vegetables to constitute healthy eating diet.
2.TO BAKE A WHOLE YAM TUBER
You can bake a whole yam tuber or tubers. Once again, depending on how many people that are going to eat it with you. To Bake a whole yam tuber of about 8 1nches,first peel of the skins and wash thoroughly.
Pre-heat the oven between 350-400 degrees F. Then add salt and smear butter or vegetable oil on the yam/yam tubers and place it on baking foil and tray. Allow to bake for at least 60 minutes or more. You can test whether it has been thoroughly baked by poking fork into the piece.
If it becomes soft and tender, then you know that it is OK. Then switch off the cooker.
A whole baked yam is as much as the barbecued yams we have in Nigeria. It tastes good and nutritious . You can eat the meal with or without any other meals but you must eat it with varieties of available vegetables, with stew, or with low fat yogurt.
3. YOU CAN BOIL YAM, MASH IT AND BAKE IT WITH FRESH FISHES,EGGS,AND EVEN GOAT MEAT.
To do that,first, boil a yam and mash it. Then put it in a bowl and add salt,a spoonful of vegetable oil,including fresh fishes,goat or lamb meat,egg or whatever accompaniment you may chose. And finally transfer to a baking dish plate/plate such as pyrex. Then smear the baking dish plate profusely with butter.
Put the mashed yam and the dish into the pre-heated oven and bake for at least between
50-60 minutes.Allow to cool. You have the choice to turn this fully baked yam recipe into a wonderful healthy eating meal!
It is good to do some experiments in cookery. Yam baking can present some challenges if not well handled professionally.
