RECIPES/INGREDIENTS/PREPARATION FOR 4 SERVINGS:
1. 2 lbs of minced beef
2. 2 eggs + 1 C of water
3. 1/2 C of pearl barley
4. 1/2 t of salt + 1/4 0f pepper
5. 8 intact large green cabbage leaves, divided
6. 2 (14 oz) cans of diced tomatoes
7. 1 T of lemon juice
8. 2 T light brown sugar + 1 onion chopped
9. 2 fresh carrot sticks, washed, peeled and grated
10. 1 t of parsley flakes
11. 2 garlic cloves, minced + 1/2 C of raisins
To start cooking, first, allow the oven to preheat to 450 degrees and then spray the inside and the lid of a cast iron Dutch oven with cooking spray.
Now place the barley into a strainer and rinse the barley under cold water and allow the water to drain.
Then pour the barley into the prepared pan and pour the water over the barley in the pan and sprinkle in the salt and pepper.
Now arrange a single layer of cabbage over he barley.
Drain the tomato juice into a small bowl and add lemon juice and whisk to combine. Whisk in the brown sugar until dissolved.
Place the egg into a separate mixing bowl and beat lightly with a fork and add the onion, carrot, beef, parsley and garlic.
Now mix the ingredients together well with your hands.
Now fold the tomatoes into the meat mixture until well combined.
Drop half of the meat mixture in an even layer over the cabbage leaves.
Now pour half of the tomatoes juice mixture over the top then, sprinkle with the raisins.
Layer more cabbage leaves over the top in a single layer
Evenly layer the remaining meat mixture over the cabbage leaves and layer any remaining cabbage leaves over the meat.
Finally, pour the remaining tomato juice mixture over the cabbage leaves and cover and bake for 45 minutes or until the cabbage is soft and tender.
