The preparation of this soup is about 10-15 minutes and cooking time approximately about 25-30 minutes.  It is safe to predict that the soup will be served and eaten within 40-45 minutes. It has a very low calorie which makes it ideal for weight-watchers.


1.   1 1/2 lbs of carrots or (12 sticks of fresh carrots , peeled, washed and cut into coin shaped sizes).

2.   225 g (6 oz ) leeks + 1/2lbs of button mushrooms

3.   150 ml of natural yogurt or soured cream

4. 5 ml (1 tbsp of plain flour + 1.1 litres (2 pints) of vegetable stocks

5.   10 ml ( 2 tsp) of ground coriander

6.   40 g (1 1/2oz) of butter or margarine

7.   salt and pepper to taste

8.   To garnish: use coriander leaves crushed or minced.

Suggested foods to be eaten with the soup, robread rolls, fried plantains, boiled potatoes, moi moi.

To cook or make this exotic soup is easy as long as you have all the ingredients ready and handy.

To start, first, slice the carrots, mushrooms and leeks. Heat the butter in a large saucepan and add the vegetables. Then cover the pan and cook gently for 5-10 minutes or until the vegetables are soft and tender.

Now  stir in the coriander and flour and cook for 1-5 minutes and add the stock and bring to the boil, stirring.Season and reduce the heat, cover and simmer for 20-25 minutes or until all the ingredients are quite tender.

Now leave the soup to cool slightly, then puree in a blender or food processor and blend until quite smooth.

Follow up  by returning the soup to the pan  and stir in the yogurt. Check seasoning and reheat gently on a low heat but do not boil.
