VEGETARIAN HEALTHY EATING RECIPES:
This article starts series of of vegetarian healthy eating recipes. These are super nutritious meals. If your favourite vegetables or fruits are not within these ingredients, please, by all means, add them to these and enjoy your meal.
1. 4 C small cauliflower florets
2. 7 C of water
3. 3 T olive oil + 1 medium onion, chopped
4. 2 garlic cloves, chopped or crushed
5. 1/4 C dark raisins
6. 2 C Arborio rice or any of your favourite brand of rice.
7. 1 C dry white wine
8. 1/3 C lightly toasted pine nuts
9. 2 T unsalted butter
10. Salt and pepper to taste
Here we go for a great cooking. To start with, bring the water to a light simmer over low heat.
Now, place the olive oil in a Dutch oven over medium high heat and add the onion and garlic.
Cook for 8 minutes or just until the onion begins to turn golden, add the cauliflower and raisins.
Cook 2 minutes, stirring occasionally
Now, place the rice in the pan and cook for 2 -3 minutes while still stirring intermittently with a wooden spoon or spatula.
You want the rice to be mixed in well with the other ingredients.
Add the wine and cook until all the liquid is absorbed.
Add 1 C of the hot water and stir until absorbed.
Continue adding 1 C of water and allowing it to be absorbed each time before adding more.
When you have 1 C of water left stir it into the rice mixture and add the pine nuts and stir well to blend.
Finally stir in salt and pepper to taste and serve immediately.
