This dish Chicken thighs onion recipes is a dish that can be made using just about any type of vegetables. Mix and match corn, green beans, broccoli, Brussels sprouts; zucchini, squash or even eggplant to make this meal a tasty mouthwatering one.

RECIPES/INGREDIENTS/PREPARATION FOR 4 SERVINGS:

1.   2lbs of chicken thighs

2.   1 onion sliced thin

3.   1 (28 oz) can of tomatoes + 1 dried basil

4.   1 t dried oregano  + 1 t dried marjoram

5.   1/2 t of salt + 1/4 t of pepper

6.   2 C of bow tie pasta

7.   5 garlic cloves, chopped

8.   2 sticks of carrots, (washed, peeled and sliced).

9.   1 C of Cauliflower florets

10.   1 green bell pepper cored, seeded, and cut into strips

The preparation time is approximately 15 minutes and the baking time is about 45 minutes. It is right to predict that the meal will be ready within one hour.

First, start with setting the oven temperature to 450 degrees allowing the oven to preheat.

Now use a non stick cooking spray and coat the bottom and sides of a cast iron Dutch  oven. Follow up with spreading the onions evenly over the bottom of the pan.

Now drain the tomatoes, reserving the juice and setting the tomatoes aside.

Add enough water to the tomato juice to equal 1 C. Now add in the basil, oregano and marjoram and stir until well blended.

Place the pasta into the pan and pour 3/4 C the tomato juice mixture over the pasta.

Now put the chicken thighs over the pasta and sprinkle with the salt and pepper. Follow up by scattering the garlic over the top of the chicken and spread the tomatoes over the chicken.

Then layer in the carrots, cauliflower and bell pepper.

Finally, pour the remaining tomato juice mixture over the top of the vegetables and cover and then bake for 45 minutes until the chicken is thoroughly cooked, soft and tender.
