CHICKEN BREASTS RECIPE WITH FLUTED PUMPKIN (UGU) LEAVES MIXED WITH SPINACH AND POSSIBLY MUSHROOM AND EATEN WITH MOI MOI ARE NOT ONLY DELICIOUS BUT HEALTHY EATING DIETS!

I can tell you with certainty that this is one of my favourite mouth-watering dishes! Who really needs heavy foods or diets these days anyway? Eating heavy junk foods these days is just inviting obesity. Who wants to be overweight or obese? Sometimes, I really feel sorry for those people who are overweight!

Do you know what effort it takes to remove one Kg or one stone from your weight? I'm overweight by my age and height and I have tried everything to reduce my weight from 14 stones to 12!

It took me God knows, Nine sweaty,depressing months to get down to 13 stones but before I could pronounce my second name, I found myself back to square one and that is 14 stones! I can't take the torture any more! I have given up!

Now, think of people who are about 5-10 stones overweight! How on earth can anybody get rid of such over weight I keep on asking? I know what I can do! For those who can take the hammer torture,I give them my praise!

If you feel as bad and weak as I'm in getting rid of overweight, don't you think it will be better to prevent overweight than eat junk foods to pile up these weights? They say prevention is better than cure and I definitely agree with them!

Instead of eating Isiewu, Ngwongwo, Nkwobi, noodles,cream cakes and all those junk foods that help to make you obese, why not turn to simple delicious diets like chicken breasts recipe with lots of spinach, boiled carrots and plenty of ugu leaves diet. They look simple to you but they are decent healthy eating diet second to none! This has been a favourite diet for me and my family for years now!

When we are not eating the spinach and ugu leaves with chicken breasts, we eat the vegetables with fresh fishes and moi moi! You can eat these types of diets for years and still maintain flat stomach, and most importantly look mentally, psychologically healthy, smart, cute, and slim-fit! Make no mistake about it, you will look and feel fitter and healthier especially if you eat several portions of fresh and dried fruits after each meal.

HOW DO YOU COOK OR PREPARE THIS SIMPLE DELICIOUS MOUTH-WATERING DIET YOU MAY ASK?

The answer is simple. In fact as simple as the meal itself.

RECIPE AND INGREDIENT FOR CHICKEN BREASTS AND SPINACH AND UGU LEAVES DIET.

1....2 lbs of boneless chicken breasts (boiler or roaster)

2....large quantity of Ugu leaves

3....large quantity of spinach

4....10 sticks of boiled carrots cut into halves

5....1lb of mushroom (local or foreign)

6....2 tsp of vegetable or groundnut oil (not palm oil)

7....fresh chili pepper

8....1 oxo,nor or magi cube

9....2-3 leaves of crushed (utazi) leaves

10...salt and spices and seasonings of your choice to taste

Once all these are assembled then prepare for the cooking. But see that the boneless chicken breasts are beautifully braised or sliced into as many portions and sizes as you may require. Add four or five cups of water. Remember you have to eat the meal like pepper soup with moi moi or ripped boiled plantain. The choice of food to eat it with is all yours. Even boiled long grain rice is equally super!

Shred or cut the vegetables spinach and ugu leaves into pieces. Cut the carrot sticks into halves or three. Then put to boil and add all the ingredients and cook for 30 minutes. Stir intermittently for the 30 minutes to allow the chicken breasts and the vegetables to cook. Allow to simmer for 5-10 minutes and taste and see if you have cooked a delicious meal.
