Cucumber salad bowls are refreshing low carb picnic recipes!

CUCUMBER SALAD BOWLS ARE USUALLY VERY REFRESHING DISH ESPECIALLY DURING SUMMER PICNICS.

Many people don't know that cucumber on its own is a very healthy eating vegetable.It goes well with any type of salad.You can eat cucumber on its own with peanut butter as well as raw carrot. You can try it and see.

Yes, cucumber is my favourite especially when I want to eat a good salad. Like every body else, gather lettuce, cold slaw, cucumber, ham,and sardines and sliced beetroot and you have a wonderful mouth watering salad.

RECIPE/ INGREDIENTS/ PREPARATIONS FOR A REFRESHING CUCUMBER SALAD BOWLS:

1..3-4 large cucumbers (depending on how many people that will participate in the eating as well as the servings)

2..1 (6 oz) can tuna in water, well drained

3..2 hard boiled eggs, (chopped or sliced)

4..1/2 celery, chopped fine

5..1 tbsp sweet onion, chopped fine

6..1/4 c mayonnaise

7..2 tsp. lemon juice

8..2 tbsp relish

9..1/4 tsp pepper

1/2c cheddar cheese, shredded

Once  the ingredients are assembled, the preparations completed, the cooking is very easy as I have always said.

First of all, cut the cucumbers in half longwise. Then remove the seeds and cut the bottom so the cucumbers set flat.

Place the tuna, eggs, celery and onion into a large mixing bowl. Stir slightly to help break up the tuna and then add the mayonnaise and relish. Stir together until the mayonnaise is slightly smooth. Then pour in the lemon juice and sprinkle in the pepper.

Stir to mix well, and sprinkle in the shredded cheddar cheese and continue stirring until all the ingredients are beautifully mixed or joined together.

Finally, fill each cucumber half with the tuna mixture. You can always make some little adjustments to suit your taste and that of your family. Cucumber boats can equally be filled with any type of salad. Egg salad, chicken salad or even ham salad make a great addition to the picnic. Happy yummy, yummy!  Eat home made lunch!
