Some people are of the opinion that this type of pie is mostly made during British Spring and Summer time than in Winter. Personally, I love to eat it all year round if I can afford the time to make it.
1..2 1/2 C toasted rice cereal
2..2/3 C butter flavoured syrup
3..1 pt. mocha or coffee flavoured ice cream
4..1pt chocolate ice cream
5..1 C whipped topping
6..1/3 C chopped pecans
To start, place a small sauce pan over medium heat and add the syrup and bring to a boil.
Reduce the heat to low and and simmer for 2-3 minutes being sure to stir very often.
Then place the cereal in a large bowl and pour the syrup over the cereal.
Mix together with spatula making sure that the cereal is completely covered. Add little butter in a 9 inch pie plate.
Press cereal mixture into the bottom and up the sides of the pie plate and freeze for 30 minutes.
Then, place chocolate ice cream in the refrigerator to soften so that it will be easier to spread.
Remove the cereal crust from the freezer and spread the chocolate ice cream over the cereal crust.
Return to freezer until ice cream becomes firm again.
Follow up and soften the mocha or coffee ice cream and add the pecans and stir together to blend well.
Spread over the chocolate ice cream in the pie and return to the freezer until firm.
Finally, remove and wrap tightly in freezer wrap until ready to serve. But before you serve, top with the whip topping!
