MOST VEGETARIAN MEALS ARE SUPER HEALTHY!
Some people especially those who are non-vegetarians always wonder if vegetarians ever eat foods with enough vitamins and minerals since some of them don' even eat eggs, meat, poultry and fishes to mane a few.
The answer to this type of statement is that although majority of vegetarians don't eat eggs, meat and fishes but they eat fruits and vegetables. Most of these fruits and vegetables they eat have the essential vitamins which compensates for the meat, fishes and eggs they don't eat.
1. 1 packet of pasta( any type)
2. 1 eggplant, peeled and cubed
3. 2 t flour +1/2 C of olive oil
4. 1 onion, sliced
5. 1 (16 oz) can diced tomatoes, drained
6. 1 (6 oz ) can of tomato puree
7. 1/2 t salt + 1/8 of pepper
8. 1 t basil + 1/4 of sugar
Now, let's go for the cooking. Remember, as long as you have all the ingredients ready and handy you will always find the cooking easy.
To start with, first, prepare pasta as directed on the package and drain well.
Place the oil in a large sauce pan over medium heat. Then place the flour in a large bowl and add eggplant cubes to the flour and toss being sure to cover each cube well.
Now place the floured eggplant in the hot oil and cook for about 6 minutes or until lightly brown.
Drain the cooked eggplant on paper towel and add the onion to the oil.
Now, cook for about 5 minutes or just until beginning to brown.
Stir in the tomatoes and the tomato puree and add the salt, basil, pepper and sugar and bring all the mixture to boil.
Now, continue boiling and stirring occasionally for 20 -25 minutes.
Finally, add the eggplant and cover the pan and continue cooking for 18-20 minutes or until the eggplant is as soft and tender as you may wish.You have done a good job and you can now serve over cooked pasta.
