APRICOT PIE IS AS GOOD AS ALL OTHER FRUIT PIES INCLUDING APPLE, CHERRY,WINTER FRUIT PIES AND LEMON TO MENTION A FEW.
I love all kinds and types of fruit pies and I equally love to bake them by myself. However, when I don't have the time, I always buy home made pies from supermarkets like Tesco, Sainsbury, Morrison, Iceland and their likes. Ready home made pies are always fresh and can have lots of real fruits.
Many people don't realise the importance of these fruit pies. They constitute healthy eating and can equally be added to or used in weight watching programs.
RECIPES/ PREPARATION/ INGREDIENTS:
1. 4 C apricots, sliced
2. 1 T lemon juice + 2 C wheat flour
3. 3/4 C light brown sugar + 1/4 C white sugar
4. 2 T quick cooking tapioca
5. Freezer pie crust for 2 crusts
6. 2 T butter or margarine
7. Heavy duty aluminum foil + 1/2 t salt
Remember that once you have the ingredients ready and handy, the baking or cooking is always easy.
to start with, place the apricots in a large mixing bowl, and add the lemon juice. Then toss lightly.
In a separate bowl combine the brown sugar, regular sugar, tapioca and salt.
Add the apricots and toss lightly being sure to cover the apricots with the mixture and allow to stand for 15 minutes.
Line a 9 in pie plate with the aluminum foil extending the foil 6 in beyond the plate.
Fill the foil with the pie filling and fold the foil over the top of the filling.
Then freeze until firm several hours or overnight.
Remove from the freezer and wrap in another layer of aluminum foil.
You can freeze up from 1 -4 months if you wish.
To bake, remove both the pie crust and the filling from the freezer.
Allow the pie crust to come to room temperature.
Then roll out one crust on a flour surface to make an 11in in circle.
Now place in the pie plate and fill crust with the filling.
Dot the top of the filling with butter and roll out the second crust to a 10 in circle and place on top of the pie and crimp the edges together.
Now cut off any excess crust and also cut slits in the top to vent the steam.
Finally, preheat oven to425 degrees and bake the pie 45-50 minutes or until crust is a golden brown.
