Exotic mushrooms salad is a healthy eating light side dish meal!

MUSHROOMS SALAD

This exotic mushrooms salad is a very tasty light weight meal for those who care for what they eat. The days are gone when people over load themselves with heavy foods. To eat healthy is to eat less and make sure the food or diet is of the highest quality and not quantity.

This particular meal could be be passed as nutritious and healthy because it is super loaded with assorted mushrooms,avocado pears, bacon, spinach leaves including 'fluted pumpkin leaves' if you live in Nigeria.

It could be served as side meal eaten before the main meal or meals arrive. It is equally suggested that it could be eaten with boiled brown rice, boiled or roasted potatoes, parsnips as well as  with assorted vegetables.

RECIPES/INGREDIENTS/PREPARATIONS AND WITH 6-8 SERVINGS:

1.  2lbs of or  a selection of about 3-4 assorted mushrooms

2.   A selection of 3-4 types of salad leaves fresh and boiled

3.   275g of smoked streaky bacon

4.   100ml (5-6 tbsp) of olive or vegetable oil

5.   1 bunch of fluted pumpkin leaves (boiled and optional) If you live outside Nigeria.

6.   1 Garlic clove, minced or crushed (optional)

7.   5 leaves of lettuce (chopped)

8.   25ml of wine vinegar + 2 tbsp of soy sauce

9.   Salt and pepper to taste

The preparation time is about15 minutes and cooking time about 10-15 minutes. It is believed that the whole meal can be ready for eating within 35 minutes.

The cooking time is relatively very easy as long as you have all the ingredients ready and handy.

If you can find them, use a mixture of wild mushrooms  or cup mushrooms for the preparation of  this delicacy.

To start, first, arrange the spinach and all other types of leaves including lettuce in a separate plate or bowl.

Cut the mushrooms into slices as artistically as you may wish. Remember cooking is a creative art. Now, remove the rind from the bacon and then cut into thin strips.

Then heat a large frying pan and fry the bacon until all the fats disappear. Then increase the heat and fry for 2-3 minutes until crisp.

Follow up by adding oil and mushrooms and cook over a high heat for 3-5 minutes until the mushrooms are soft and tender.

Then add the garlic(optional) and and  bell pepper and cook for another one1 or 2 minutes longer.

Now remove the mushrooms from the pan and scatter over the salad leaves and follow up with addition of the vinegar and soy sauce to the remaining juices in the pan and boil again quickly for 2 minutes.

Finally, season with salt and pepper and pour the warm dressing over the salad and serve immediately or hot.
