Exotic seafood with spaghetti is a superb healthy eating and nutritious meal!


This Exotic seafood with spaghetti is a superb mixture of large king prawns, scallops, mussels and leeks enhanced and cooked with a rich deep seated blend of flavor and taste. It is also literally, drowned in a delicious creamy saffron and  wine sauce.

The meal has approximately 450-550 calories. The preparation time is approximately 15 minutes and the cooking time about 20-25 times. It is safe to predict that the entire meal could be ready to be served and eaten within 35 minutes.


1.   350 g (12 oz ) of dried spaghetti

2.   900 g (2lbs.) of mussels

3.   2 leeks + 1 onion, peeled

4.   30 ml (2tbsp) of olive oil

5.   1 garlic clove, crushed

6.   1 pinch of saffron strands

7.   325 g  of large cooked and peeled prawns

8.   200 ml of dry white wine

9.   150 ml (1/4) of double cream

10.   45 ml (3 tbsp) of parsley, chopped

11.   175 g of scallops (cleaned)

12.   Chopped parsley to garnish

13.   Salt and pepper to taste.

To start cooking Exotic seafood with spaghetti, first, clean the mussels and thinly slice the leeks; finely chop the onion.

Then heat the oil in a large saucepan, and add the leeks, onion, garlic and saffron and saute for 3-5 minutes, stirring intermittently.

Then cover the pan, lower the heat and cook for about 10-15 minutes or until the vegetables are really soft and tender.

Cook the spaghetti in a large pan of boiling  salted water for 15-20 minutes or until  soft and (tender but still firm to the bite).

Then, add the wine, cream and parsley to the leek mixture and bring to  the  boil and boil for few minutes to reduce slightly.

Finally, add the seafood, re-cover and cook for 3-5 minutes, shaking the pan frequently, until the mussels have opened but discard any that stay closed. Then remove and serve hot or lukewarm.
