GREEN PEPPER SOUP IS AS GOOD AS ANY OTHER KIND OF PEPPER SOUP EXCEPT THAT IT CONTAINS A LARGE QUANTITY OF DARK GREEN VEGETABLES THAN OTHER SOUPS!
Nigeria I must admit has several kinds of soups more than some of the countries I have visited. However, Nigerian other kinds of soups are traditionally eaten with fufu - that is any food that can be mashed or pounded, rounded and swallowed! Such foods are yam, garri, semovita,amala, ground rice etc.
Pepper soups are different from ordinary soups because, they are more or less classified as appetizers! They can not be eaten as a meal.Traditionally they are rarely cooked in homes because the other types of soups are more popular and very much patronized.
Pepper soups including green ones are generally eaten in beer palours,canteens and restaurants all over Nigeria than in
homes.Green pepper soup is an ideal pick me up body warmer especially during rainy seasons. Green pepper soup or any other type of pepper soup goes down well with drinks such as beer!
Green pepper soups are given the name because majority of the ingredients used in cooking the soup are wholly made up of large quantities of green leaves such as fluted pumpkin leaves, water leaf, water cress,spinach etc.
GREEN PEPPER SOUP RECIPE:
1.Large quantities of dark green vegetables such as fluted pumpkin (ugu) leaves,Large quantities of spinach,water leaf,sweet potato leaves(optional)etc.
2.Small quantity of (Utasi) leaves and ground (Uziza) seeds
Ibo names.These are special spices. Utasi leaves is bitter but it gives every pepper soup the unique taste. Uziza is hot like black pepper!
3.Large quantity of fresh chilli pepper and small quantity of salt.
4. Several pieces of goat or lamb meat and liver in addition to several pieces of tripe.
All are cooked together. Allow to boil for at least 50 minutes. As soon as the soup is fully cooked, you will be greeted by the sweet smell oozing out from the pot.Allow to simmer.
Green pepper soups or any other pepper soup is served and eaten hot! A good plate of green pepper soup can be a very expensive delicacy in any beer parlour or restaurant in Nigeria.
