Indian curry vegetable rice gives you spontaneous  spicy and tasty meal!

INDIAN CURRY VEGETABLE RICE IS AN IDEAL INDIAN AND ASIAN FAVOURITE DISH.

This Indian curry vegetable rice meal is in fact a balanced diet because  it contains  starchy and mid way carbohydrates and many other protein rich ingredients.

The choice of ingredients here are all yours. If you don't like white rice, you can change it for brown rice. There are many species of rice from Thai, USA long grain rice to Indian Bassmati  white rice or brown.

You can also mix up your choice of vegetables. You can add corn, potatoes or even squash to make this dish something different every time you make it.

The preparation time is approximately 25 minutes and baking time about 45 minutes.The dish is likely to be ready for consumption within 1 hour.The calories are 567, Fibre 20g while carbohydrate is 105g.

RECIPES/INGREDIENTS/PREPARATION FOR 4 SERVINGS:

1.   4 C of  instant   brown or white rice

2.   4 garlic cloves, chopped

3.   1 small onion, halved and sliced

4.   2  jalapeno pepper, stemmed, seeded and chopped

5.   2 C +2 T of vegetable broth

6.   1 ground cumin  + 1 ground turmeric

7.   4 fresh sticks of carrots ( washed, peeled and sliced into coins)

8.   2 parsnips, sliced into coins

9.   1 zucchini, halved and cut into 1/2 in. slices

10.   3 C of frozen peas.

To start cooking this Indian curry vegetable rice, you first , set the oven control to 450 degrees allowing the oven to preheat.

Now coat the inside and the lid of the cast iron Dutch oven with cooking spray and scatter the garlic, onion and jalapeno into the bottom of the pan.

Spread the rice evenly over the top and pour the broth into a bowl.

Now add the cumin and turmeric and whisk until blended in well.

Pour 3/4 of the mixture over the top of the rice and stir to coat the rice well with the liquid then spread the rice out evenly.

In  order  layer the parsnips, zucchini and then the peas.

Finally, pour the remaining broth into the pan and cover and bake for 45 minutes or until the vegetables are soft and tender.
