Lemon meringue pie is a delicious protein rich pie!

LEMON MERINGUE PIE IS DEFINITELY A DELICIOUS MOUTHWATERING DISH:

the great thing about this particular dish is the fact that it is loved by every body including young and old as well as the weight watchers and vegetarians. You might be carried away by the pie's sweet lemon flavor and aroma as you dip your spoon into it.

I must confess it is really mouthwatering and fits any party or even as Christmas buffet dish.

Many of my friends have requested me to show them how it is made or cooked as well as the ingredients.

The preparation time is approximately 15-20 minutes while the cooking time is about 40-45 minutes.

RECIPES/ INGREDIENTS/PREPARATION:

Filling:

1.  200ml. of water

2.  2 tsp of lemon meringue pie flavoring

3.  4 eggs  + 2 tbsp of cornflour

4.  8 tbsp of splenda granules

5.  2 egg whites

6.  small slices of line to decorate

7.  pinch salt to help taste.

For the galette base:

1.  2 tbsp of wheat bran +1 tbsp of splenda granules

2. 2 egg white = 4 tbsp of oat bran

4 tbsp of fat-free fromage frais

Let's go for the cooking! First, preheat the oven to 200C/Gas 6.Then, prepare the galette base by beating the egg whites until stiff and combining them with the remaining ingredients.

Now, use the mixture to line the bottom of a 21cm (8in) pie dish and bake for 5-10 minutes.

Now to make the fillings, heat the water in a sauce pan. In a bowl, combine the whole eggs, cornflour, 7 tbsp of the sweetener and the lemon meringue pie flavoring.

Now, pour the mixture into the saucepan, warm it over a gentle or low heat and stir intermittently until it thickens. Then pour the lemon mixture over the galette base.

Lower the oven temperature to 180 C/Gas 4 and bake the filled pie for 20 minutes.

Now, remove from the oven and leave the pie to cool slightly.

In a bowl, beat the egg whites with the salt and the remaining  1 tbsp of sweetener until quite stiff.  Now, using a piping bag, decorate the top of the pie with the egg whites.

Return the pie to the oven for a further 10-15 minutes until the meringue topping turns golden brown. Then allow to cool and decorate with slices of lime.
