Lima butter bean salad is a nutritious low calorie and protein rich meal!

Any salad dish or meal is as good as any other salad diet because they are eaten by people who care about what they eat especially to maintain good health and  healthy body at any given time.

Lima butter bean salad is one of the ideal buffet dishes normally served at Christmas buffet tables and usually eaten while waiting for the main Christmas meal. It is equally good for any family or for any party or gathering.

People who care about their calorie intakes like weight-watchers always enjoy eating this type of salad especially when beans are added to the dish for protein and this makes the dish a balanced diet.

Lima butter bean salad is so easy and simple to make. Generally it takes approximately 15-20 minutes for preparation and total time about 20 minutes.

It is great to try something  different on your Christmas buffet table  and this meal is ideal because it is not only healthy but tasty.

To exaggerate words, this Lima butter bean salad has all the colors of Christmas and tastes light and refreshing to boot. Even the canned beans don't take away the from its flavorful taste. It makes about 16 servings.

RECIPES/INGREDIENTS/PREPARATION:

1.   2.   2 (15 1/4 oz.) cans of lima beans, drained

2.   2 (15.oz.) cans of butter beans, drained

3.   2 sweet red peppers, chopped

4.   1 cucumber sliced thin + 1 bunch or romaine lettuce or iceberg lettuce Optional)

5.   2 green sweet peppers chopped

6.   1 large sweet onion chopped

7.    4 garlic cloves, minced

8.    1/2 C of lemon juice + 1/2 C of olive oil

9.    4 T of cider vinegar

10.   2 t ground cumin  + 1/2 t pepper

Always remember that the making or cooking is always easy as long as you have the ingredients ready and handy.

To start, first place both types of beans into a serving bowl and toss to combine.

Then add the red sweet peppers, green peppers, onion and garlic and toss again.

Now in a small mixing bowl, whisk together the lemon juice, oil and vinegar.

Add the cumin and pepper and whisk until blended  in well. Then pour the mixture over the bean mixture and toss to coat well.

Finally, cover with plastic wrap and chill for at least 1 hour before serving.
