Nigerian dishes are as numerous as the stars in the sky!
NIGERIAN DISHES ARE NOT ONLY AS NUMEROUS AS THE STARS IN THE SKY BUT THEY ARE FULL OF HEALTHY EATING DIETS!
It is almost impossible to enumerate Nigerian dishes because they are too many to count. The good thing about Nigerian dishes are the fact that they were handed to us by our forefathers. Our ancestors had been enjoying our foods before the arrival of the white men into our country.
From my own researches, I discovered that white men influence on our mode of eating did not count much! Looking at it objectively,the only area we can find white man's influence is where breakfast is concerned and that is about 10%!
That means that 90% of Nigerian dishes are original, genuine dishes handed down to us by our forefathers! This is why most Nigerians can't be tempted with the so called Oyibo dishes! I have met many Nigerians in foreign countries.
An average Nigerian who visited let's say London or Germany, perhaps, on a conference, meets you and realizes that you are a fellow Nigerian, the next phrase he will blurt out is bound to be "Brother, is there any restaurant here we-e I go chop garri, Amala or pounded yam?" Before you could open your mouth, he will add, "Nna, I don hugri tommuch..!" if he is an Ibo man!
He will go on to explain to you that he is a son of the Nija soil. "I want real country food, I mean Nigerian food! I can't stand these Oyibo chop! "Nigerians are very proud of their dishes no matter which ethnic division he comes from.
NIGERIAN TRIBAL DIVISIONS MAKES IT ALMOST IMPOSSIBLE TO ENUMERATE ALL NIGERIAN DISHES!
The ethnic divisions or tribal divisions make it impossible for any writer or researcher to describe accurately the types or kinds of dishes eaten in Nigeria! The cultural divisions too influence even the ways these dishes are cooked!
Nigerian dishes are loosely classified into main meals, eaten in the Mornings, Afternoons or lunch and ones eaten at nights. Some of the dishes are once again, loosely regarded as snacks! Dishes like pepper soup recipes are regarded as appetizers and not food or meal by Nigerian standard.
They are loosely classified because an average Nigerian can chose to swallow eba or eat boiled yam in the morning and repeat either the same stuff at lunch or at dinner time.There is no rules or regulations guiding what he chose to eat at any given time!
I have seen it done and I have personally did it too! On several occasions, I have eaten rice in the morning for breakfast and repeated it in the evening as my dinner. Some villagers can skip eating anything in the morning and opt to eat eba for afternoon as well as for evening.It is no big do because every Nigerian is brought up that way!
Even the various soups and stews that we make in Nigeria with which to eat our main dishes like rice, beans,garri, Amala pounded yams,plantains to mention a few can be culturally or tribally orientated.
The Yoruba people are very fond and proud to describe their foods or dishes in their yoruba tribe dialect,the Hausas,the Ibos,the Efiks/Ibibios as well as Rivers people equally take delight in naming their dishes by their mother tongues or dialects.
Nigerian dishes are as follows: Yam, plantain, rice, coco yam, chicken, goat ,fishes,Egusi,Ofe Nsala,Ewedu,Amala,Plantain and fried plantain dishes. Beans,stews, Moi moi, Akara, Pounded yam, Suya,pepper soups, Edika-ekong soups,Ogi,akamu or pap; Coconut rice, Tuwo Shinkafa, Kokoro ,Akpu, Eggs and Bread, cassava; Beef and lamb dishes!
Okoro, onugbu and ogbono soups; Fried and roasted fish dishes, Chin,chin, Puff Puff, Banga soup, vegetable soups, Yam and Spinach pottage, Tapioca and bread fruit dishes; Salad,and Jollof rice>
Fluted pumpkin dishes; Miyan yakuwa and Miyankuka dishes, Afang soup, Isiewu, Nkwobi, Ngwongwo dishes and various organic fruits and vegetables.These are dishes, and snacks I can possibly name here. Most of these constitute Nigerian dishes,side dishes and snacks!
Only a few of the dishes are commonly recognized and eaten generally by all and sundry!
Only white people or Europeans have regulated modes of eating classified rigidly into Breakfast, Lunch and Dinner!The issue about Nigerian mode of eating is the attitude of do it the way it suits you!
