OKRA SOUP RECIPE
OKRA SOUP RECIPE IS NOT ONLY ONE OF THE NIGERIAN FINGER-LICKING SOUPS BUT IT DEFINITELY GOES WELL WITH DRY, FRESH FISHES AS WELL AS GOAT MEAT AND POUNDED YAM!
To be sincere, I never used to like Okra soup until I got married. Yes, I got married to a wife who is an expert on cooking Okra and 'Ofe Nsala' soups! You can't count the numbers of mouth-watering and finger-licking soups Nigerians eat! No stranger or foreigner has ever eaten any of Nigerian soups and failed to appreciate and love eating them!
When you are eating any of the Nigerian soups, you must be prepared to come to terms with nature! By that, I mean, you must be prepared to use your hands, and fingers in particular. Take for example, pounded yam with okra or egusi soup or any other Nigerian soups don't require to be eaten with fork and knife.
It is against Nigerian eating etiquette to use these unholy instruments! Nigerian soups can be very delicious, tasty and nutritious and they go very well with the fingers hence they are described as finger-licking! If you are a foreigner, please try and eat or cook some of the Nigerian soups! They can be exotic and overwhelmingly delicious and nutritious!
OKRA SOUP RECIPE
1....2lbs of fresh or dried Okra (Cut into pieces or shredded)
2....Large quantity of fluted pumpkin (ugu)leaves (Cut into pieces or shredded)
3....Large quantity of spinach
4....Several pieces of goat or lamb meat
5....Several pieces of dried or smoked and fresh fishes
6....Several pieces of stock fish (optional)
7....2spf of groundnut or vegetable oil
8....Fresh chili pepper, onions and fresh tomatoes
9....Spices and seasonings including oxo,nor and magi cubes
10....Add 1 or 2spf of salt to taste
11....5 cups of water
Preparation and cooking starts with washing all the ingredients thoroughly. With a large cooking pot filled with water and set to boil, add the meat and stockfish (Okporoko) and allow to boil for at least 25-30 minutes.
Then add the shredded or cut Okra as well as the vegetables, oil, respective fishes including ground crayfish and continue to stir intermittently until all the ingredients and okra are fully blended. Add salt, pepper, fried onions and all spices and seasonings.
Continue to stir for another 15-20 minutes. Finally, allow to simmer for 10-15 minutes. You will definitely be greeted by the sweet smell of the delicious cooked okra soup oozing out from the cooking pot!
The choice is all yours whether to eat the okra soup with Amala, eba garri, ground rice; pounded yam or akpu. This is a perfect okra soup in Nigerian exotic style!
