1.   4 skinless chicken breasts

2.   2 sticks of fresh carrots (peeled, washed, sliced or minced)

5.   Parsley + 1 Red onion (thinly sliced)

6.   1 garlic cloves + 3 cups of water

7.   Handful of red or black grapes (cut into halves)

8.   10 Cherry tomatoes ( cut into halves or quarters)

For Dressing: 1 tbsp of olive oil, + 1 cap full of white wine vinegar, + 1 tbsp of Dijon mustard.

To start, first, slice the chicken breasts into strips and put them in a large bowl. Then crush the garlic and add to the chicken along with the pineapple juice and parsley. Then cover cover with cling film and place in the fridge for at least, 1 hour.

Now follow up by using a griddle pan and cook the chicken strips. Now slice the carrots into baton strips and place into a salad bowl and add the mixed lettuce leaves, cherry tomatoes, red grapes, and sliced onion.

To make the dressing, in an empty jam jar, mix the Dijon mustard, olive oil, and white wine vinegar. Then place the lid back on and store in the fridge.
