Potato au gratin recipes is a super healthy eating vegetarian dish!

POTATO AU GRATIN A SUPER DIET FOR VEGETARIANS:

Although this meal does contain little or no vegetables but it is still an enjoyable dish and most importantly, it is very easy to prepare once you have the ingredients ready and handy.

RECIPES/ INGREDIENTS/ PREPARATION:

1.   2 1/2 lbs red potatoes, peeled and cut into slices.

2.   1 medium onion, sliced thin

3.   1 C vegetable broth

4.   1/2 C white wine

5.   1 T unsalted butter ( optional)

6.   2. T olive oil

7.   4 garlic cloves, diced

8.   1 1/2 lbs. ripe  fresh tomatoes, sliced

9.   1 t thyme, divided  + salt and pepper to taste.

To start with, first grease a square casserole dish on the bottom and layer the bottom of the casserole with the onion slices.

Lay 1/2 of the potato slices on top of the onions.

Then, add the salt, pepper and 1/2 t of thyme and place the tomato slices on the top of that.

Sprinkle  with the garlic and add more salt and pepper and the remaining  1/2 t of thyme.

Place the remaining potato slices on top.

Then, spread the olive oil evenly over the casserole and add the wine.

Now, place enough broth in the casserole to bring the liquid 3/4 up the sides of the casserole and dot the top with butter if desired.

Preheat the oven to 375 degrees and cover the casserole with foil and bake for 45 minutes.

Now remove the foil and check to make sure the top layer of potatoes are starting to be soft and tender. They should be moist to the touch.

Continue baking uncovered for 45 minutes or until golden brown.

When it is done, you will be able to know because if you put a knife or fork through in the middle it will have no resistance.
