RICE AND BEANS ARE DEFINITELY EVERY NIGERIAN FAVOURITE BALANCED MEALS! I HAVE NOTED TOO THAT NOT ONLY NIGERIANS ARE TOO EXCITED WITH EATING RICE AND BEANS!
I must be honest, rice and beans are not only Nigerians favourite dish,but stable diets eaten by all and sundry. Even children as old as 6 months are constantly fed with rice and beans diets. It is very commonly eaten these days all over the world!
There are many varieties and species of rice as well as beans.There are long grain rice, white or brown, there are numerous species of beans, brown, black eyed, kidney, broad, black, and red beans to mention a few!
Some beans are harder and takes longer time to cook than rice. Some beans like red or kidney beans are normally soaked in water for several hours before they are cooked. Nigerian brown beans is not only easy to cook but sweet by nature compared with black eyed beans. Broad beans are easily cooked but they are not as enjoyable as black eye beans or brown beans.
From what I have read, I have found that we Nigerians are not the only people in the world not only madly in love but excited with eating rice and beans! Rice and beans are equally one of the most nutritious diets in the world. The beans is loaded with fibre and protein but rice is starchy.
Every Nigerian is fond of eating rice and beans with rich nutritious stews. The stews are cooked with various pieces of goat meat, chicken,goat liver,fried onions,spices,seasonings and salt and pepper to taste. Fresh cooked rice and beans have special mouth-watering smell and aroma that naturally oozes out from well cooked stews and rice and beans recipes.
RECIPE/INGREDIENTS FOR RICE AND BEANS RECIPES
Nigerians naturally and generally measure their rice and beans in cups but not in weight as done in most western countries.However, before rice and beans are cooked, the cook has to decide how many people that are going to eat the meal.
Assuming a family of three, at least 3 cups of rice and 3 cups of beans will be adequate for three or four eating. Once again it must be remembered that Nigerians can not and will not eat rice and beans without stews. after cooking.
1. 3 cups of brown long grain rice
2. 3 cups of black eye or brown beans
3. 4 cups of water (replenish as required)
4. Wash the beans three times and pour into the boiling water to start to cook. The beans must boil for at least 30-40 minutes before the rice is washed and added into the pot to boil simultaneously! Under normal circumstances, both the rice and beans will be well cooked under 70 minutes. Allow to simmer foe 5-10 minutes and then allow to cool.
Boiling the rice and beans brings no headache. It is the stew that will bring a few waiting.
