Salmon with vegetable recipes is a rich blend of healthy eating nutritious meal!

                      SALMON WITH VEGETABLES:

This meal has so much unique ingredients to boast of. Among the ingredients are Salmon, and healthy eating vegetables like cucumber, carrots, celery and zucchini to mention a few.

'Adding the olive oil to the fillet may result in less dense fillet. But if you prefer richer Salmon flavor instead of the oil, add a 3 or 4 pats of batter to the top of the fillet before adding the remaining ingredients'.

The preparation time is about 30 minutes while the baking and cooking time is approximately45 minutes. It is safe to predict that the entire meal would be ready for serving and eating within 1 hour.


1.   2 lbs. of salmon fillet

2.   4 scallions, chopped

3.   2 t of olive oil

4.   3 garlic cloves, sliced thin + 1 lemon, thin sliced

5.  10 whole fresh dill sprigs, divided

6.   1/2 t of salt + 1/4 t of pepper

7.   10 red potatoes, peeled and sliced thin

8.   4 carrots, (peeled, washed and cut int strips

9.   1 zucchini, cut into sticks

10.   2 celery stalks, sliced + 1 cucumber cut into sticks

To cook or make this dish   'Salmon with vegetable recipes' is relatively easy as long as all the ingredients are ready and handy.

To start, first, allow the oven to preheat to 450 degrees.

Now, follow up with spraying the inside and lid of a cast iron Dutch oven with a non-stick cooking spray.

Layer the scallions into the bottom of the pan and place the salmon fillet onto of the scallions, skin side down.

Now drizzle the olive oil over the top of the salmon fillet and sprinkle half of the salt and half of the pepper over the salmon and add the garlic.

Now place the lemon slices over the top of the salmon and place half of the dill sprigs over the lemon slices.

Then scatter the potatoes into the pot.

Place the potatoes, carrot, zucchini and celery into the pot and place the remaining dill sprigs over the top.

Finally, sprinkle with the remaining salt and pepper and cover the pan and bake for 40 minutes or until the salmon is tender.

As soon as it is tender remove and serve hot or lukewarm.
