Squash carrot stuffing is a healthy eating and nutritious side dish!

This is a side dish but takes more than 5 hours to cook

Majority of side dishes take some few minutes but this is one of those that take long hours to cook.

However, if you are looking for something different than the traditional stuffing to serve, here is your wish being granted. You have got to try this pleasant side dish.

If you are having trouble finding yellow squash, zucchini will work just as well.

The preparation time is roughly about 15 minutes while the cooking time is approximately 5 hours.

RECIPES/INGREDIENTS/PREPARATION FOR 10 SERVINGS:

1.   1 (10 3/4 oz.) of can cream of chicken soup

2.   1/4 C of flour

3.    1 (8oz.) container of sour cream

4.   2 yellow squash, sliced

5.   1 onion, chopped

6.   1 C of grated carrot

7.   1 (8oz.) pkg. of stuffing mix

8.   1/2 C of butter, melted

Once we have the ingredients ready and handy the cooking is literally easy.

To start with, find a large bowl and in that bowl whisk the flour, soup and sour cream together until smooth.

Add the squash, onion and carrot and stir gently until well coated.

Then place the stuffing mix in a separate bowl.

Pour the melted butter over the stuffing mix and stir well. Place half of the stuffing into the bottom of the slow cooker and spread the coated vegetables over the stuffing.

Top with the remaining stuffing. Finally, cover the slow cooker and cook on low for 5 hours or until the vegetable are soft and tender.
