Squash smothered potatoes is an ideal healthy eating vegetarian meal!

VEGETARIAN  DISH SUPER LOADED WITH  INGREDIENTS  THAT CONTAIN LOTS OF ESSENTIAL NUTRIENTS:

Squash smothered potatoes is a healthy vegetarian dish that can be cooked and baked for about 12 servings. The preparation time is about 20 minutes while cooking and baking time can be approximately 45-50 minutes. It is safe to predict that the meal can be ready  for serving and eating within 1 hour.

RECIPES/INGREDIENTS/PREPARATION:

1.    4  baked potatoes

2.   2lbs butternut squash, peeled, seeded and cut into1 in cubes

3.   1 1/2 t cumin seeds + 1 t oregano

4,   1/4 C sesame seeds + 3/4 C pumpkin seeds

5.   2 T canola oil + 3 C of water

6.   2 large onions,  finely chopped

7.   6 garlic cloves, minced fine + 2 T chili powder

8.    1 jalapeno pepper, seeded and minced

9.   1 (28 oz) can of chopped tomatoes, drained.

10.   1 t of salt + 1/4 t of pepper

11.   2  C chickpeas, rinsed + 1 1/2 C frozen corn, thawed

12.   1/2C cilantro, chopped fine

To prepare and cook Squash smothered potatoes is easy as long as you have the ingredients ready and handy.

To start, first, bake the potatoes as you normally do and set aside.

In a large skillet over medium heat toast the cumin seeds

They should become hot and carry a strong aroma and remove from the pan. Then add the oregano to the pan and toast for 5-10 seconds.

Place in the bowl with the cumin seeds and add the sesame seeds and the pumpkin seeds to the pan and toast just until they begin to brown.

Now  place in the bowl with the other ingredients and place all the seeds in a food processor and process the seeds into fine powder and set aside.

Place the oil in a large skillet over medium heat and add the onions and cook approximately for 5-10 minutes or until the onions begin to tender. Now add the seed powder, garlic, jalapeno peppers and chili powder and cook for 2-5 minutes.

Then stir in the squash, tomatoes, chickpeas and 3 C of water and the salt and pepper and stir well.

Now cook for 25 minutes until the squash is soft and tender,

Add more water up to ! C if necessary and stir in the corn and cook for 5-10 minutes until the corn is heated.
