STUFFED PEPPER SOUPS ARE NOT COOKED VERY OFTEN IN NIGERIA BECAUSE NIGERIANS SEE PEPPER SOUPS AS APPETIZERS RATHER THAN A FULL MEAL!
To be sincere, stuffed pepper soups are rarely cooked in Nigeria compared with other types of pepper soups! To some extent some Nigerians have not even had the privilege of hearing about stuffed pepper soups let alone eating them! They are uncommon dish among the villages too.
You can't blame an average Nigerian for not cooking or eating stuffed pepper soups because we were brought up to know that pepper soups are generally regarded as appetizers not meals.
In some Western and Asian countries, the cooks add sugar to their pepper soups. Nigerians will hate to see,eat or taste such soups. Some foreign cooks again, add garlic to stuffed pepper soups but under Nigerian context garlic is rarely added in any type of cooking!
TheNigerian cooks would rather add onions than garlic! Garlic can sometimes look like an anti-social ingredient and I hardly and will never add it in any of my cooking! Good luck to those who eat it or add it into their cooking!
Another thing about stuffed pepper soup is the addition of rice in pepper soups. An average Nigerian will look at it as full meal!
I prefer to cook my stuffed pepper soup in Nigerian way and style.
THE RECIPE/INGREDIENTS FOR STUFFED PEPPER SOUP
1. 3lbs. of goat meat cut into several small pieces or cubes
2. 2lbs. of shredded fluted pumpkin (ugu) leaves
3.1lb. of spring onions cut into pieces
4. 1lb. of spinach shredded or neatly cut into pieces
5. 2 cups of brown long grain rice
6. 1 tin of chopped tomatoes
7. 1 green or red sweet pepper
8. 6 leaves of (Utazi) shredded
9. 3 quarts of water (replenish if needed
10. A dash of thyme and mixed herbs
11. 4 spoonfuls of vegetable oil,1 spoonful of lack or white pepper and 2 spoonful of salt
12. 1 large onions chopped into pieces
13. 1 oxo or magi cube
Cooking takes about 55-65 minutes. Add all these into the pot of boiling water and continue to stir intermittently until the soup is fully cooked. Allow to simmer for 10 minutes. You will know when it is fully cooked. As I have always said,'you will be greeted by the sweet smell of a well cooked stuffed pepper soup'
