 THERE ARE MANY KINDS OF VEGETARIAN NUTRITIOUS MEALS THAT ARE VERY EASY TO MAKE OR COOK  AND THIS  NOODLES DISH IS ONE OF THEM.

Since the arrival of Instant noodles in 1958, many vegetarians have no need to go hungry or to think a lot on what to eat.

The most important aspects of Instant noodles  is the fact that it  can quench your hunger within minutes. In addition, you can eat it with assorted kinds of vegetables, foods, condiments; ingredients to mention a few.

Some years ago people used to think that they were mere junk foods but that is not true.

Today, a single serving of instant noodles is high in carbohydrates and fat, but low in fibre, vitamins and minerals.

RECIPE/ INGREDIENTS/PREPARATION:

1.   1lb of wheat noodles

2.   1/3 C of cashew, chopped

3.   1 T dark roasted sesame oil

4.   2 T canola oil

5.   1/2 t chili paste with garlic

6.   4 garlic cloves, minced

7.   2 t  fresh ginger (grated)

8.   8 oz shiitake mushrooms, thinly sliced

9.   1 medium bell pepper, sliced thin

10.   1/2 of water  + 2 T of soy sauce

11.   8 oz sugar snap peas, cut in half

12.   2 T seasoned rice vinegar

Always remember that once the ingredients are ready and handy, the cooking is always easy. Just follow the order stipulated in the recipes or formula.

To start, first place a large pot of water on high heat and bring to a boil and then place the oil in a skillet over medium high heat.

Add the chili paste, garlic and ginger and cook for 45 seconds stirring constantly.

Now place the mushrooms and bell pepper in the skillet and cook  for 4-5 minutes stirring occasionally.

Now, slow add the water and turn the heat low.

Add the peas and cook for4-5 minutes or until the peas are just slightly soft and tender.

Add the soy sauce and vinegar slowly and stir to mix well.

Now remove from heat.

Cook the noodles in the boiling water for 7 minutes or until the noodles are soft and tender to your liking.

Drain well and add the noodles to the skillet and turn the heat on the medium high.

Now, toss the noodles to coat well.

Then add the sesame oil and cook for 1-2 minutes and be sure to stir constantly.

Finally, remove from heat and sprinkle with the cashews and serve hot or cold.
