EXOTIC VEGETABLE STEW IS NOT ONLY DELICIOUS AND NUTRITIOUS BUT CAN SERVE AS A HEALTHY EATING MEAL ON ITS OWN!
Average Nigerian has grown up to know and believe that all stews ought to be "Red" but that is not really true! Nigerian red stews have been known all over the world as if it is National emblem.
Generally, we Nigerians eat all sorts of food with red stew. Such foods include rice, beans, yam, plantain, meat,fish and coco yam. Red stew is equally added in our soups too.
Here, in this article, I'm going to introduce an alternative-Vegetable stew which can be cooked and enjoyed in Nigeria and any other countries of the world.
The exciting thing is that this type of stew is really exotic, nutritious,tasty, delicious and may be better and healthier than red stews.
RECIPE/INGREDIENTS FOR VEGETABLE STEW:
1...2lbs of goat meat (Cut into several small pieces)
2...2lbs of boneless chicken or guinea fowl(Cut into several small pieces)
3...5-10 sticks of carrots (cut into cub es or any shapes)
4...1 bunch of spring onions(Chopped into pieces)
5...1/2lb of mushroom (Local or foreign finely chopped)
6...1/2lb of runner beans (cut or chopped)
7...2 large onions (sliced and fried in vegetable or olive oil).
8...2-3 fresh tomatoes (chopped or sliced)
9...1/2 of cauliflower( If not available, 2 pieces or slices of yam or potatoes)
10...2 large sweet pepper (chopped or shredded)
11...Seasonings: 2 beef oxo cubes or one magi cube
12...2 tsp of 'Bisto' gravy granules or powder and mix with lukewarm water.Add small quantity of mixed herbs or thyme.
13...Add 1 tsp of salt and pepper to taste.
14...Add 4-5 large cups of water into the cooking pot and let boil.
PREPARATION AND COOKING;
Once you have all the ingredients ready, the cooking is relatively very easy. Start with the cooking pot on the stove boiling. Then add the various ingredients, the meat, chicken, carrots, spring onions etc into the b oiling water and stir continuously and then, intermittently for 35 minutes.
Add the fried onions, and all the seasonings, salt and pepper and allow to boil or cook for another 25 minutes. Allow to simmer for 10 minutes and then decide what you want to eat the exotic stew with. You can eat it with rice, with yam, or plantain! You can even eat it on its own. It is always better to decide what you want to eat it with in advance.
